Wild golden ale was the starting point for Ida Pruul as a brewery. It’s 100% barrel fermented and aged. Initially it was brewed using various cultures collected from different regions of Victoria. As time has past, the process has developed into something different. Cooling the wort down overnight in the brew system and sending it to the barrels the next morning, where it ferments and ages between 12- 14 months. Packed full of flavour while remaining gentle and delicate, forever changing and evolving. A wild ale made in the heart of Melbourne.
Non-alcoholic wild golden ale

And, while the majority of local offerings remain of the pale lager / pale ale / XPA ilk, you can find others: fruited sours and IPAs, for example, even the odd stout. You wouldn't say there was anything too out there, however. At least until this arrived.”

Our Wild Dark Ale is fermented using locally cultivated yeast, featuring Gladfield Black Forest Rye malt and aged in shiraz barrels for 8 months. No hops added.
